White Chocolate & Peanut Butter Rice Crispy Cakes ♥
Yesterday I made some white chocolate and peanut butter rice crispy cakes - and they were sooo yummy I thought I'd share the (very easy) recipe with you! I've made normal milk chocolate cornflake/rice crispy cakes before, but I thought I'd try white chocolate with peanut butter for a nice sweet and salty flavour combo!
300g white chocolate
1 heaped tablespoon peanut butter
Enough rice crispies or cornflakes to be nicely coated - I didn't measure how much I put in, just gaged it as I stirred it altogether.
- Break white chocolate up and put in glass bowl. Add your heaped tablespoon of peanut butter. You can use crunchy or smooth. I used crunchy and so my finished cakes had little nutty pieces in it, yum!
- Place bowl over pan of hot water until all melted, and mix together.
- Stir in rice crispies or cornflakes until all cereal has a nice coating but isn't too gloopy or dry.
- Spoon into little cupcake cases (or one big round lined cake tin if you want a giant crispy cake) and put in the fridge until set! I made about 20 little cakes in cupcake cases with these ingredient measurements.
They are not something you'd make to show off to friends, but if you fancy a yummy, ridiculously easy sweet treat then these are perfect. I've been eating these all weekend - they're too good to resist!
Have you done any weekend baking?
