If I Knew You Were Comin' I'd've Baked a Cake ♥

I love baking and trying out all different recipes and decorating techniques, but sometimes you really do need to devote a whole day to it. You have to get your ingredients sorted, let your butter get to room temperature (I always forget to get mine out the fridge in the morning), the measuring, the mixing, the baking, the testing, the cooling and then the decorating! Don't get me wrong, I love all these things about baking, and delight in spending all day in the kitchen creating yummy cakes, but it can be a lengthy process!

One of my cheap, cheerful and speedy solutions for baking is a bit of a cheat, but if you are surprised with late minute visitors this is a quick way to get a yummy 'homemade' cake on the table, ready to serve with a steaming pot of tea!

My sneaky cheat is the Sainsburys basics sponge mix. I know it sounds rubbish but at 22p this is a bargain too good to miss! When I need to do last minute baking the one thing I never have is butter. I always have flour, sugar and eggs, but never butter. I keep a couple of these sponge mixes in my cupboard as they only require a bit of water and egg, and hey presto - a cake!

I use a packet per cake tin and sandwiched together with a bit of jam (another store cupboard basic), and a bit of icing sugar sprinkled on the top you have a fine looking (and tasting) cake. Here's a slice of a cake I made recently. I know there is probably a lot of die hard bakers out there who would recoil at the thought of not making a cake from scratch, but if you need a quick solution, or perhaps don't have much baking experience but want to bake something - this is a simple and speedy way to get involved!

  3. I have been known to use those Betty Crocker cake mix packets myself...I had never thought to use the supermarket own brand ones! On your recommendation I will pop one in my trolley this week! I agree with both ladies above; as long as there is cake to eat then who cares where it comes from! Haha!

    1. Ooh yes try it. That sainsburys one says one packet for two cake tins but that comes out flat as a pancake so I always use one packet per tin to get a big fat cake! Would love to see yours if you do one! :-) xxx

  5. That's such a handy tip to know! I agree that nothing is better than a homemade cake from scratch, but I am always stressing when I have friends over about what I can feed them!! I bet your friends think you're the ultimate host, whipping up cakes at the last minute!! Xx
